Happy Valentine's Day!

I can't help but share a little bit of love with everyone that stops by here today. Heather (#36 in the comments from the previous post) is the winner of mail from me. But because I am feeling extra nice- or just nostalgic about handwritten mail- I've decided to pick one more person to get some mail from me. So leave another comment telling me your favorite dessert and I'll choose another person from these comments to get some mail.
But everyone wins today because I am passing along one of my Buttercream recipes! Yay for Valentine's, cupcakes, and homemade frosting that tastes divine, right?! This recipe is one from out of a children's book that I have made a couple of times. It's fairly easy and it is so creamy, sweet and velvety. We all love it around here! It makes enough for one cake or 24 cupcakes. Unless you like your frosting super thick. Then it will likely only cover 12 cupcakes for you. =)
Buttercream Icing
Ingredients:
4 Eggs
2/3 cup of sugar
1 cup butter, room temp (I use unsalted butter.)
1 tsp. vanilla extract
Directions: Whisk together egg whites and sugar in a bowl. Place bowl in a double boiler on low heat. Whisk occasionally until sugar is dissolved and mixture is very warm- about 150 degrees F. Remove from double boiler and whip with mixer on high speed until stiff peaks form. Put mixer on lower speed and add butter in small pieces. Next, add vanilla and mix until smooth.
Tint icing as you like.
Enjoy!!

Those cupcakes look yummy! My favorite dessert is so simple, but so tasty, a snickerdoodle cookie! Plus, my 4 year old thinks the name is halarious, so she loves them too!

Gooey Butter Cake is an all time favorite of our family.
Nohing says love like 2 whole sticks of butter & a pound of powdered sugar :)

Hi, Jody... I LOVE Chocolate Cherry Cake. It tastes just like a giant Chocolate Covered Cherry... which I also love!

And if you don't mind, give us an update on Wyndham soon. Is she walking on her own now? Is she still improving? Just if you get a minute. I know you're incredibly busy.

My all time favortie recipe is a coconut cake that came from Cooking Light several years ago. I generally only make it at Easter and it is to die for. Not too coconutty either (if you catch my flake).

Thanks for sharing, Jody! Love desserts, in general, that's my problem ;) Cheesecake and creme brule are wonderful, but so are the simple things like grandma's homemade apple pie and a cupcakes with homemade frosting! So hard to choose. Sometimes, for me, it's the memory that is behind the dessert as much as it is the dessert itself =)

I love buttercream too, but your recipe is different. I'm going to try yours. My favorite dessert is probably raspberry white chocolate cheesecake.

ooohhh, well, we have a new little shop in our town and tonight we had chocolate covered strawberry cheesecakes (cupcake sized) and raspberry filled cupcakes from there for our Valentine's Day/Anniversary ... I'd have to say that they are some of my new FAVORITES!! :)

I love cupcakes, too! So easy and so cute! I thought about making some today, too, but opted to make some tasty waffles with strawberries and whipped cream for supper. :-)

Your cupcakes look soooo good! I am totally a dessert person, so it is hard to choose a favorite. Right now, I'm craving warm apple crisp with vanilla ice cream melting on top. Yum!!

Hi Jodi- This was brought to me by a dear friend when I broke my wrist a while ago. It's the best ever!!!

Here is the Raspberry Dessert recipe...

Crust
1 stick butter
1cup flour
1/4-1/2 cup of pecans chopped. Mix all above together, press into 13x9 pan. Bake @250 till slightly brown. Set aside and cool.

Body
Melt 50 large marshmellow in 1 Cup milk. DON"T LET BOIL. Set aside

Cook 2 (10oz) frozen bags of raspberries with a bit of water. Add 1/2 cup sugar, and 2 TBS of lemon juice.
Cook until comes to full boil.

Thicken raspberry mixture with a mixture of 4 TBS cornstarch dissolved in 1/4 cup water.

Add 1 container (9oz) of Coolwhip to marshmellow mix and pour this over the crust.

Finally, spread the raspberry mix on top of the marshmellow and crust.


Store in refrigerator for 24 hours.......and enjoy!!

My favorite dessert is a banana split. My best friend and I still go on the opening and closeing days to the local ice cream parlor to get one, something we've been doing for 18 years!! In the winter I pick one night and my family has banana splits for dinner!! Not the most balanced meal, but when winter is getting too long, it brings a taste of summer:)~Courtney

I love mail! My favorite dessert . . . I love anything sweet but have to say I like a cupcake piled a mile high with creamy icing - yum!

We are coming upon the last few days/weeks/months? with my grandma who is 92. There is so much I want to ask and write down of her memories before then. I grew up with divorced parents so I spent the majority of those years with my grandparents (whom my dad lived with). I remember my grandma being an amazing cook although she didn't really make anything extraordinary. But her cooking was always done with love. Although not my favorite dessert (that would be any chocolate cake that comes from Cafe Latte...), I remember her spending a lot of time making kolackys (kolotchkees?), which I hope will not be a lost art if I can get hold of her recipe!

There is nothing like the art of real mail. It has been something I have enjoyed doing in years past-sending out cards to people. (that they can get in the mailbox-unheard of in today's world with all our high-tech toys!) Anyway-one of my goals this year was to send at least one letter/card a month to someone-so far it's averaging about 3. :) Enjoy, and thanks for inspiring me!

I am not a big dessert person (gasp! lol) but I have a few I love...one is pineapple upside down cake. Jody I am betting you would make an awesome one...I am always inspired when you share the cooking you do for and with your family. Enjoy your day!
